  • 90 g Flora Regular
  • 70 g brown sugar
  • 1 egg ,lightly beaten
  • 130 g self-raising flour
  • 2,5 ml (½ tsp) salt
  • 5 ml (1 tsp) baking powder
  • 250 g mixed seeds like pumpkin, linseed, sesame seed and sunflower seeds
  • 180 ml dates, chopped
  • 140 ml banana, mashed
  • 120 g oat bran
  • 125 ml (½ cup) buttermilk

Preparation (for 12 portions)

  1. Preheat oven to 180°C. Grease a 12-hole muffin pan with Flora
  2. In a large bowl, using an electric mixer, cream the Flora and sugar together until light and fluffy. Beat in the egg until combined.
  3. Sift the flour and baking powder together in a mixing bowl. Fold into the creamed mixture with the seed mix, (reserve a few for the top), dates, banana, bran and buttermilk until combined. Spoon mixture into the muffin pan until 2/3 full. Sprinkle with the reserved seeds.
  4. Bake for 20-25 mins, until cooked when tested with a skewer. Cool in pan for 5 mins. Transfer to a wire rack to cool completely. Store in an airtight container.
