  • 500g McCain peas
  • 1 onion, finely chopped
  • 2garlic cloves, crushed
  • 3 Tbsp. (45 ml) Flora Gold
  • 125ml chicken stock
  • 2stalks of fresh mint
  • Robertsons Black Pepper
  • Robertsons Atlantic Sea Salt
  • Pinch of sugar (optional)
  • Fresh Mint to garnish
  • Extra Flora Gold to serve

  1. Heat 30 ml Flora Gold in a pan over medium heat. Add the onion and crushed garlic then sauté for a few minutes until they just begin to brown.
  2. Add the peas, chicken stock and mint stalks. Bring to a rolling boil. Season and add a pinch of sugar.
  3. Stir the peas and onions and boil for about 5 minutes until the peas are cooked. Drain and add the remaining 1 tablespoon Flora Gold and some black pepper. Remove the wilted mint leaves and discard. Serve once garnished with some fresh mint and dollops of Flora Gold.
